can anyone tell me whats the widest rime you can go with on the mazda 3 sedans .......

8" with a high offset, it gets really really close though to the struts so you gotta watch that as well.

looking at a piaa rim its a 45 offset and 8" wide think it will work?

It will rub and poke out a bit...

If you go 18 x 8 ... you need 50 offset and over ..
Other then that you will have to roll your fenders
