I read about people putting power cables through the hood release, and glove box.
I have a 07 GT and there is a plastic plug in a hole behind the gas pedal, which goes through the firewall. It is a fairly big plug. It is highly visible if you are looking with the hood open; it is about mid line, down about 6 inches to a foot.
Does anyone know what this opening is for? Why do people not use this for wiring?
Thanks.

Some people do use it for wiring. It is for the throttle cable on the versions of the 3 that are not throttle-by-wire.

It's just the clutch cover that is only there on those with auto trans. Well I think that's what you are referring to. I used this method which was super easy to go through.
EDIT: I didn't see you said gas pedal. There is also the one I mentioned above. :)

I don't think I am referring to the clutch cover because I have a manual car :P.
Noisy Crow has it I think.

SOMEWHERE I have a link to where this is described with pictures...
Not the one I had in mind, but here is something, anyway: http://www.mazda3club.com/showthread.php?p=405807
Here: google this: Mazda 3, white plug, brake booster, wire, firewall
And figure out the MazdaWorld link, as I think that is what I saw
