Would anyone know if a 7" wide rim is too narrow for a 225/45 tire?

Not really, standard tire (if your talking about stock snowflakes) is 205/50 - your tire is 2cm wider. Usually there is a 1inch leway for the tires that fit these rims.

What tires are you planning to run on the rims?
Most 225 tires should be fine but you would be just getting by. It's better to check with the manufacturer of the tire.

In general, 7 inch rim is okay with 225, but no wider. As suggested above, each tire is different so check with the manufacturers specs online.

+1 to every comment. It usually says on the tire the max width

Thanks very much people, I have checked the sites and it seems okay but definitely the minimum. I may stick with the stock 205's.
What about 215/45/17? Would work great with 17x7.

Width works yes.
