So I just sold my Jackhammers because of the size and now I'm looking for something new and also smaller. I've done my research on forums, Crutchfield, Sonic Electronix but I just can't seem to find what I'm looking for. I'm ready to pay the price for the quality, but I think that stuff like 800$ for JL Stealth Box is stupid. Hopefully you guys can point me in the right direction based on my following criterias :)

Anything less than 12 inch deep
A ported or bandpass enclosure (unless you think a sealed enclosure in particular could provide a similar vibration and sound)
Either 10" or 12" (again, I don't mind single or double, as long as it's not 21" deep)
If it's single subwoofer, an enclosure that I could set in the middle and mount two amps on each side for the looks (don't judge)

Hopefully someone can give me some tips based on experience, or at least point me in the right direction. Thanks again !

Smaller and ported do not fit together. Ported boxes require a lot of airspace to work well. Also using shallow mount subwoofers like the WX series is going to have negative effects on your bass. I would suggest the Jl 10W3v3 would be a good option.
I would also suggest having your own enclosure built as opposed to buying one of the sub/box combos. It will cost you more money, but will be more suitable to your requirements.

How would I go "getting my own custom enclosure built" ? From what I see and read, it costs in the thousands to get such a setup. I know I said I was ready to pay for quality, but is it really worth it ?

You should be able to look up the specs and have the box built for fairly cheap.
Technically still custom but not the custom you are mentioning that is in the thousands.
Any wood shop can do it.
You can also do it yourself on the cheap.

Now I'm talking a box, and not a custom fit enclosure. It's just going to be a box built to the specs for the sub, which all should really be anyways

Places charge a a lot of money to design/install a box or enclosure. If you go to a wood shop with a design for a box, with dimensions written down on paper, etc, the cost will be reasonable. You should be able to get a sealed enclosure that is small'ish, but still provides good quality sound.
A lot depends on the type of music you are listening to, and how much bass you want.

First thing here is you haven't mentioned your sub amp wattage. How can anyone help you out without knowing this? RMS wattage please. Secondly spending $800 on a sub is not stupid, it's whether you can appreciate good sound and quality over anything less. S.F.W. gave you good advice, get the 10W3-V3 and make or buy a box to suit. A single ten inch box would not be expensive...I would suggest (with your requirements) to get the ProWedge 10W6v2, a little expensive but worth it, if your amp can drive it well...Sometimes it's worth splurging.

I've always been partial to JL Subs, they work great in small, sealed enclosures.

In the 90's when car audio was big, I've owned W0,W1,W3 and W6's in different sizes and quantities in car's I've had.

I have no amp either. I'll have to buy that too. What I meant is that I'd rather spend a thousand on the subwoofers themselves rather than the box, but after reading your replies, I seem to understand that the box is as much important

Build a box If you have the facilities to do so.

Another option on the cheap is to go to your local highschool. Ask the shop teacher for a good student to build a box for you for a little money. Most will say yes as long as you provide the wood. It's a plus plus. You get a box for CHEAP and the student gets to build something they want to build.
I did a few in highschool for others. Usually only cost the person 20+materials. And believe it or not. It usually turns out just as good as others, if not better.

Spending $800 on a sub IS ridiculous especially if its a 12 or a 10.
The only way you would pay $800 for a sub is because its a 15 or bigger and your seriously going to put a heck of power into it.
Alpine, Pioneer, RE audio are all good companies to go with, just remember smaller is not better in the case of subwoofers.
Any decent 10" woofer will do good, price range from 150-250$.
The most important part you should focus on is your amp and subwoofer box, you need clean power and a well built box to spec.
A 4ohm subwoofer with about 600RMS at 2 ohms amp would suffice.

Would you think a single 8'' in the jack stealth box would give me satisfaction ? Let's say I were to get the 1000 Watt Peak Alpine.. Shouldn't I get good kicks for rap song ?

The 8" will provide ok kick, but not that much. A 1000 Watt Peak amp is going to be overkill for an 8" sub.

I'm just looking for a nice vibration and low bass for rap songs without using my whole hatch. And JL Wedges are too much for me. I thought it was only based on RMS .. What would be the difference between a 8'' 500 RMS and a 12'' 500 RMS ?

an 8" will give you good kicks but not good low frequencies at least not as good as a 10 or 12
