Whenever I turn the AC or window defrost on, I get a very loud screeching sound which goes away and comes back periodically. Is this an AC compressor clutch problem? I heard the part is about $700 not including labor? Also at my previous oil change, mechanic wrote that an oil filter housing is needed next service and the R/F strut is starting to leak. Would it be recommended that both front struts be replaced? How much usually? And wouldn't an alignment need to be done afterwards?

How much total for the parts + labor? Is it even worth fixing on a 2007 car? (I also have rust starting to build in the rear wheel wells.)

Struts. Replace both. Don't just replace one.
IMO it's worth replacing them. Cost I cannot tell you. If you just want a close oe replacement Monroe makes a spring/strut combo piece. I believe they're in the $200/per side range. Alignment is recommended.

The ac. Thats intirely up to you. For me I just fixed my ac because it wasn't working (did it all myself). But LOVE having ac. If you don't feel you need the ac, remove the belt and do without. Many people have.
